Italian Beef {Leftovers} Soup

Here is an easy soup created from Italian Beef leftovers. I make Italian Beef with a Louie's seasoning packet and a roast. If there are leftovers, then I freeze them to reuse for this soup.

I will heat the beef on the stove and cook the veggies in the microwave and then combine the two. If you didn't say enough broth from the Italian Beef, then you might have to supplement with broth or water & salt. Super easy!!
