It's mid-September and I'm already tired from our fall schedule. Besides school, my kids have a lot of extracurricular activities. My teen is on drum line for marching band, jazz band, prepping for swim season, and working toward getting his license. My daughter has two ballet classes, guitar club, choir, scouts, and was just cast in The Nutcracker. All my son's activities revolve around the high school, which is only a mile away. I'm most busy driving my daughter to activities, managing the house and meals, and leading the girl scout troop. Sometimes the schedule overwhelms me, especially during the late afternoon/early evening witching hour. That is the most challenging time of day for me. Planning my meals ahead of time is a must!
Even if I plan ahead, there are a few evenings a week that I don't have much time to prep, let alone eat. I need something effortless and tasty. Nothing is easier than rotisserie chicken! Sometimes we just pull it apart and make burritos, but my family's favorite meal with it is chicken salad.

Rotisserie Chicken Salad

Ingredients
- Marketside Rotisserie Chicken
- Hard Boiled Egg
- Apple
- Mayonnaise
- Mustard
- Relish
- Optional: Pecans, Salt & Pepper
Instructions
Pull the chicken off the rotisserie chicken, shredding as you go. Place in a bowl and add your mayonnaise, mustard, and relish. I always eyeball it, but with this chicken that had approximately 4 cups of chicken, I used 1/2 cup mayonnaise, 1 tablespoon mustard, and a heaping tablespoon of relish. Stir until mixed.
Chop egg, apple, & pecans. Once again, I eyeball these amounts. I used 1 apple, 3 hard boiled eggs, and 1/2 cup pecans with this chicken. Add a dash of salt and pepper. Stir well and serve.

I ate my chicken salad along with some lettuce wrapped in a tortilla, the cole slaw, some blueberries, and a glass of Coke Zero. My son had a busy afternoon/evening. He had practice after school, and then just stayed at the high school until I showed up for open house. I brought along this meal to go for him in my favorite to-go container.
