Here is my family's favorite recipe made with RO*TEL. It's super easy cheese (queso) dip, just like that found in Mexican restaurants.
Easy Queso Dip
1 lb. white cheddar cheese
1/2 cup whole milk
1/2 can of RO*TEL (drained)
Slice or shred the cheese so that it will melt easily. Put the cheese and milk in a double boiler and heat, stirring constantly. When it's melted, stir in the RO*TEL.
How easy is that? My family loves it so much that we double the recipe. We just can't get enough of it!!
