Here are some tips on taking dinner on the go.
Easy Dinners To Go with Easy Lunchboxes
My kids are busy. Really busy! The more they advance through their extracurricular activities, the more time we are away from home in the afternoons and evenings. That time away means I need to plan ahead for dinner. We usually eat dinner around 5:30pm. 6:30 is late around here. There is no way I am going to skip dinner, so that means dinner on the go!

If you've gotten to know me through my blog, you know I am frugal. I hate to waste money. I also try to make healthy choices, so that means we will not grab fast food. I keep some snacks in the car or in my purse, but that won't suffice around dinner time. So I brown bag it. Actually we take our dinner to go in a blue thermal bag, so that means we blue bag it.
About six months ago I got these great containers called Easy Lunchboxes. Many of my bento blogger friends have raved about them for years, and I finally got some myself. These are great sturdy containers, but they are a bit big for my daughter's lunches. She's not a big eater and usually has a very short time to eat at school, so food gets wasted. I've been using them for grown-up lunches and our dinners on the go. In fact, I now call them Easy Dinnerboxes! Here are some of the dinners we've packed this summer.

These were all packed for me and my daughter. She had 30 minutes between ballet and drama this summer, so we didn't have a lot of time to eat in between. I would heat up a small rice heating pad to keep the food warm. Here are the meals~
*Spaghetti squash with meat sauce and Asiago cheese, cherries, carrots & dip for me
Shells with Parmesan cheese, cherries, peach, carrots & dip for her
*Pork lettuce wraps, peach, blueberries for both of us
*Chicken salad on day old JJ's bread, carrots & dip, blueberries, and watermelon for both of us
*Beef stew, carrot mash, peaches, cashews for both of us
*Balsamic Rosemary Chicken, green beans, ranch beans, blueberries for me
Quesadilla, green beans, blueberries for her
*Cabbage meatballs, homegrown tomatoes, blueberries for both of us

Brown bagging it (or blue bagging it in our case), doesn't mean you need to skimp on dinner OR grab some unhealthy fast food.
