Patriotic Poke Cake

Here is a fun and easy poke cake that is perfect for your Independence Day or other patriotic celebrations. A small star food cutter makes mini red stars out of strawberries, which pop with blueberries against the white frosting.

white cake mix
eggs, oil, water as per mix directions
red box of gelatin
blue box of gelatin
whipped topping
strawberries
blueberries
Bake your cake in a 9x13 glass dish according to the directions on box. Let the cake cool for at least 30 minutes. Mix each packet of gelatin separately with 1 cup of boiling water. Stir well. I added a few drops of blue food coloring to my blue gelatin to make it darker. Poke holes in the cake every inch or so with the end of a wooden spoon. Use a medicine dropper or similar tool and generously drop gelatin in each hole. Add color to every other hole. Frost with softened whipped topping.
Cut the strawberries so that they are not too thick. Use a mini star cutter to make berry stars. Decorate the top of the cake with your berries. I alternated mine on a diagonal. Cover and refrigerate at least 2 hours.
We took this to a Memorial Day barbeque and people thought it looked good. Once we cut into it, everyone wanted some. It had a fun marbled tie dye look inside. We used blue raspberry and cherry gelatin and you could taste both. It was delicious!
