Chocolate Chip Pumpkin Spice Cake Cookies

Today I have an easy pumpkin cookie recipe made with a cake mix. Tomorrow I will have another variation of this cookie.

It's no secret that I love pumpkin. Any and all forms of pumpkin. I've been very focused on pumpkin over the last two months and have come up with several new recipes. Nearly all involve dessert, but isn't that the best way to enjoy pumpkin? This recipe isn't new. In fact, I posted a variation of it about 4 years ago as a muffin. That recipe used a yellow cake mix. These are made with a spice cake mix and include chocolate chips.

Chocolate Chip Pumpkin Spice Cake Cookies

Prep Time: 10 minutes
Cook Time: 9-11 minutes

Ingredients (30 cookies)
  • spice cake mix
  • can of pumpkin
  • semi-sweet chocolate chips
  • cinnamon sugar
Instructions

Mix the spice cake mix and pumpkin.
Stir in the chocolate chips.
Chill dough for a few hours.
Take a rounded teaspoon of dough and roll it in the cinnamon sugar.
Place onto a cookie sheet lined with baking sheet or parchment paper.
Bake at 350 degree for 9-11 minutes.
Remove from pan and let them cool on a wire rack.
Store in an airtight container.

These cookies are very soft and moist. I took them to a high school football game and they disappeared quickly. The band kids and parents have gotten used to my pumpkin desserts this fall. My variation that I am posting tomorrow was my favorite of these two. They were also slightly easier because they are prepared with one less step.
